Per person take:
- 100 grams (1 cup) of flour
- one pinch of salt
- one egg
Add one extra egg, so there is one more egg than portions.
Mix with water until it becomes a gooey, not runny, dough. Put a portion of the dough in the Spätzle Maker and grate or press it into boiling salt water. Let cook until all the noodles float on the top, which doesn't take long, and skim them out of the boiling water using a spoon with holes.
Enjoy with gravy or melted cheese. Leftovers can be fried in a pan the next day.
Spätzle Maker: Either a grater or a press. I find the grater easier to use and clean. BTW, rinse the dough off with cold water right after use. This will make clean up so much easier. |
